Grandma's Banana Bread
Ingredients
- 3 tbsp olive oil
- 1 cup sugar
- 1 egg
- 1 cup ripe bananas, mashed (or you can use more)
- 2 1/2 cups all-purpose flour
- 3 1/2 tsp baking powder
- 1 tsp salt
- 3/4 cup milk
- 1 cup chopped nuts (optional; I use walnuts)
- Spices to taste (optional)
Method
- Preheat oven to 350° F; grease a loaf pan.
- Mix together the flour, baking powder, salt, and spices (if using spices) in a bowl and set aside.
- Mix together the olive oil and sugar, then add the egg and continue.
- Add the milk and the banana and mix well.
- Once all wet ingredients are combined, add the dry ingredients and mix well.
- If using them, mix in the nuts, then put mixture into loaf pan.
- Bake for 55-65 minutes. Let cool for a little while before cutting.
Notes
This recipe is one my grandma developed for her first husband (my biological grandfather), who I think couldn't eat butter or something? Anyway, it uses olive oil instead of butter, so you could probably make it dairy-free by swapping out the milk for a milk substitute. I honestly don't know what the exact method my grandma used to make this, so this recipe might end up not working (let me know if you try and it doesn't work). Also, you can always add more banana if you want, and you can also include spices like cinnamon if you want to.
