Great Grandma's Banana Bread
Ingredients
- 1/4 cup butter
- 3/4 cup sugar
- 1 egg
- 2/3 cup ripe bananas, mashed (or you can use more)
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 tbsp buttermilk/yoghurt
- 1/2 cup chopped nuts (optional; I use walnuts)
- Spices to taste (optional)
Method
- Preheat oven to 325° F; grease a loaf pan.
- Mix together the flour, baking soda, baking powder, salt, and spices (if using spices) in a bowl and set aside.
- Cream together the butter and sugar, then add the egg and continue.
- Add the buttermilk/yoghurt and the banana and mix well.
- Once all wet ingredients are combined, add the dry ingredients and mix well.
- If using them, mix in the nuts, then put mixture into loaf pan.
- Bake for 1 hour. Let cool for a little while before cutting.
Notes
This recipe is super old, and the original uses shortening instead of butter (I don't know what kind of buttermilk she used). I honestly don't know what the exact method my great grandma used to make this, so I usually just follow a basic creaming method and add all the wet ingredients that aren't butter or sugar as I feel like it. Also, you can always add more banana to give a stronger flavour, and you can also include spices like cinnamon if you want to.
